Winter Dinner Soup

Good evening to all,

It is night here, prepared my night food sharing the wonderful recipes of ” Russia Eggplant and Tomatoes Soup” with you all, i made some changes , make it more healthy by adding some more ingredients to it.

Tomatoes are very healthy , unfortunately it is having acidity, (pH is the most widely used scientific method for ranking acidity, and it goes from 0-14, with low numbers being the most acidic and high numbers being the least acidic.)

For canned tomatoesand tomato paste, the pH range is 3.5-4.7. For tomato juice, the range is 4.1-4.6.

How to we balance this and make it healthy dish for diabetes patient , even normal person like me can eat too.

The ingredients are as follows:-

3 big tomatoes- boil and peel the skin.

1 full clove of garlic

3-4 pieces of shallots

8-9 pieces of Mushrooms

1/2 – 1 Green Apple

1 big eggplant

1 teaspoon of salt

5-6 tablespoon olive oil.


Mushroom:- cut them, boil 10 mushroom with pinch of salt or until they are soft and cooked.

Eggplant:- Peel the skin, cut them into small cubes , boil 12-15 mins eggplant add pinch of salt, make sure it is fully cooked as per the picture shown above.

Onion & Garlic:- soak in hot water, cut them into small pieces.

Tomatoes:- cut the top , remove the internal seeds, cut the outside layers , boil them for 5 mins when the skin start getting peel off , means time to remove from stove, put the boil tomatoes into the blender add hot water to it. Tomatoes Puree ready .

Green Apple:- Remove the skin , cut them into small pieces.🌹Incase fear of sugar content in green apple will spark blood sugar , please note reduce it to 1/2 apple or two pieces, it is enough to make tomatoes acidity goes down .

Take a pan put 6 tablespoon of olive oil, fry the onion and garlic first , once it is little brown add one teaspoon of salt , stir it will for 40 seconds, add mushrooms and eggplant to it, cook for 10-15 mins, add tomatoes puree allow it to cook for another 10 -15 mins , once it is almost done add green apple to it, that takes another 5-8 mins, once it is cooked delicious smell will come , it is ready to eat.

Mushroom & Green Apple are Alkaline.

Green Apple :-

  • 125 calories.
  • 30 g carbohydrate (10% DV)
  • 4.9 g dietary fiber (20% DV)
  • 22 g sugars.
  • 0.6 g protein (1% DV)
  • .053 mg riboflavin (3%DV)
  • 116.6 IU vitamin A (2% DV)
  • .072 mg vitamin B6 (4% DV)

Eggplant:- Is heart Health

Eggplants contain fiber, potassium, vitamin C and B6. These are all known to help lower the risk of mortality from heart disease. Studies have shown that eating these lead to lower rates of heart disease even in smaller quantities. A recent study showed that people who eat vegetables such as eggplant containing these nutrients have a 34% lower risk of contracting heart disease than those who do not.  Eggplant also contains vitamin K which is necessary for blood clotting and helps prevent calcification of the arteries which prevents dangerous plaque deposits which may cause blockages.

It help lower the blood pressure:-

Eggplants contain a red-blue flavonoid plant pigment called anthocyanin which has been found to help with dropping blood pressure significantly. Lower blood pressure is known to lower the risk of stroke, heart attacks and blood clots. Eggplant also contains vitamin E which is good for treating and preventing chest pain, blocked or hardened arteries and high blood pressure.

Prevent some type of cancers:

Research has shown that eggplants contain polyphenols which are known for their anti-cancer properties. Eggplants have anthocyanins and chlorogenic acid which are antioxidants. They fight inflammation and oxidative stress related damage found in the body.  Studies have found that they can prevent tumor grown and help the stop the invasion and spreading of cancer cells. Eggplant contains vitamin A which may be beneficial in the treatment of cancers such as lung, breast, bladder, oral and skin cancer.

Help fight Anaemia:

Eggplants have been studied for their ability in helping those who have iron deficiencies. Eggplant has many essential minerals including iron and copper. These minerals assist in improving the health of red blood cells within the bloodstream. Studies have shown that consuming eggplant if you are anemic can help boost energy, strength and eradicate feelings of exhaustion and worry.


Eggplants contain a lot of fiber and are low in soluble carbohydrates.  Nutritionists suggest adding eggplant to your diet if you have type 2 diabetes. One recent study found that a more eggplant based diet can help manage or prevent type 2 diabetes. More research is needed to back up these figures. Eggplants contain high amounts of alpha-glucosidase and angiotensin compounds that can control glucose absorption. Plus, eggplants have phenols which help insulin break down carbohydrates slowly which aids in controlling blood sugar levels.

This dish is for diabetes patients without any hesitation,you can cook and eat with or without rye bread. Moreover it is “Alkaline Soup” . For diabetes patients please put less 2 pieces of green apple .

This soup os fibre, control blood sugar , heal stomach alignments, no gastric problems, improve digestive system, no metabolism problem,give calmness to body, and reduce excess heat ness from body.

No white bread and whole wheat bread.

My dinner for today .

Today evening, i have given this soup to high blood pressure patient, it reduce from 150 to 130 systolic, diastolic 72 and pulse 62. So automatically blood sugar in control, and acid reflux decrease which is one due reason high blood pressure occurs to patient .

Reminder:- Never stop diabetes and blood sugar medicine without consulting your doctors.
